Avocado Pistachio Ice Cream

Ingredients
1 cup low-fat cottage cheese
¼–⅓ cup pistachios
¼ cup honey
½ medium avocado
⅛ cup vanilla protein powder
1 tsp vanilla bean paste
Pinch of sea salt
Instructions
Add all ingredients to a high speed blender and blend until completely smooth and creamy.
Pour into a Ninja Creami pint container or a freezer-safe loaf pan.
Freeze overnight or for at least 6 hours until fully solid.
If using a Ninja Creami, process on the ice cream setting. If no Ninja Creami, remove from freezer and let sit for 5–10 minutes, then scoop.
Top with extra chopped pistachios and a drizzle of honey.
