Crispy Pan-Fried Zucchini with Sour Cream

Ingredients
1–2 zucchini, cut into long strips or rounds
Salt, to taste
Black pepper, to taste
Seasoning of choice (garlic powder, paprika etc.)
2 eggs, beaten
Flour, for coating
Vegetable oil, for frying
Sour cream, to serve
Instructions
Slice the zucchini into long strips or thick rounds.
Season generously with salt, black pepper, and your seasoning of choice.
Coat each piece in flour, shaking off any excess.
Dip into the beaten egg, letting any excess drip off.
Heat a generous splash of vegetable oil in a frying pan over medium-high heat.
Fry the zucchini in a single layer, covered with a lid, for 3–4 minutes per side until deeply golden and crispy on the outside and tender inside.
Drain on paper towel briefly, then serve with sour cream on the side.
