Chocolate Butternut Squash Brownie

Ingredients
½ a butternut squash
1 tbsp cocoa powder
2 tbsp maple syrup
1 tbsp peanut butter
1 egg
1 tsp baking powder
Chocolate chips
Instructions
Preheat oven to 180°C.
Cook the butternut squash until soft — air fry for 20 minutes or roast in the oven until tender.
Once cooled, scoop out and mash the butternut squash flesh until smooth.
Mix in the cocoa powder, maple syrup, peanut butter, egg, and baking powder until well combined.
Spread the mixture back into the squash shell or into a small baking dish.
Top with chocolate chips if using.
Bake for 20–25 minutes until set.
