Dark Chocolate Pistachio Nougat Bites
Makes: ~12 bites
Pistachio Nougat Base
8 Medjool dates, pitted
½ cup pistachios
1 tbsp honey
Pinch of fleur de sel
½ tsp matcha powder or a drop of natural green food colouring (optional, for a more vibrant green tone)
Dark Chocolate Coating
100g dark chocolate (¾ cup)
1 tbsp coconut oil
To Finish
Crushed pistachios, to top
Dried rose petals

Instructions
Add the dates, pistachios, honey, fleur de sel, and matcha (if using) to a food processor. Blend until you get a smooth, chewy, nutty nougat dough.
Roll the mixture into small bite-sized balls. They should be soft, slightly sticky, and perfectly shaped.
Melt the dark chocolate and coconut oil together until silky and glossy — use a double boiler or microwave in 30-second bursts.
Dip each nougat ball halfway or fully into the chocolate for an elegant finish.
Place on parchment paper and top with crushed pistachios while the chocolate is still wet.
Refrigerate for 15 minutes until the chocolate is fully set.
