High Protein Pistachio Cottage Cheese Cheesecake

Ingredients
1 cup cottage cheese
1 cup full fat Greek yogurt
2 eggs
1 cup shelled pistachios
½ cup maple syrup or honey
2 tbsp oat flour (or almond flour)
1 tsp vanilla extract
Instructions
Preheat oven to 180°C / 350°F. Grease a 6-inch springform pan.
Add the cottage cheese, Greek yogurt, eggs, pistachios, sweetener, flour, and vanilla extract to a blender. Blend until completely smooth, stopping to scrape down the sides as needed.
Pour the batter into the prepared pan and smooth the top.
Bake for 40–45 minutes, until the edges are set and the centre still has a slight jiggle when gently shaken.
Remove from the oven and let cool slightly, then transfer to the refrigerator and chill overnight is best for clean slices and full set.
