Brûléed Stuffed Dates

Ingredients
1 wedge Fromager d'Affinois Le Fromager double cream cheese (or any soft, mild creamy cheese)
Squeeze of honey, plus extra for drizzling
Pinch of salt
12 Medjool dates, pitted
¼ cup turbinado sugar
Black pepper, to finish
Fresh thyme, for garnish
Instructions
Cut the rind off the wedge of cheese.
Add the cheese to a food processor with a squeeze of honey and a pinch of salt. Whip until completely smooth and creamy.
Transfer the whipped cheese into a piping bag.
Pipe the cheese generously into the cavity of each pitted date.
Press each stuffed date into the turbinado sugar so the top is well coated.
Using a kitchen blowtorch, carefully brûlée each date until the sugar is golden and caramelised.
Finish with a drizzle of honey, a crack of black pepper, and a few fresh thyme leaves.
Serve in paper wrappers for a fun presentation.
