Cookie Dough Blended Oats

Ingredients
1 cup chickpeas (canned, drained and rinsed)
¾ cup oats
1 cup cooked cauliflower (frozen works great)
2 Medjool dates, pitted
1 cup unsweetened plant milk
2 tbsp peanut butter powder
1 tsp vanilla extract
1 tsp white miso (optional, adds depth)
Dark vegan chocolate chips, to top (optional)
Instructions
Add everything to a high speed blender and blitz until you get a super smooth, creamy consistency.
Pour into a bowl and top with dark chocolate chips for that full cookie dough feeling.
Eat immediately or refrigerate for a thicker, cold overnight oats texture.
