Russian Apple Sour Cream Cake (Sharlotka-style)

Ingredients
5 eggs
220g plain flour
3 limes, juice
200g sour cream
10g vanilla sugar (or 1 vanilla pod)
160g sugar
10g salt
8 large tart apples
Instructions
Preheat oven to 180°C. Grease a baking dish with butter.
Peel and slice the apples any way you like — thin rounds, wedges, or spirals using a mandolin slicer.
Sprinkle the apple slices with lime juice to prevent browning.
Arrange the apples in the greased baking dish.
In a bowl, whisk together the eggs, flour, sugar, salt, vanilla sugar, and sour cream until you have a smooth, pourable batter.
Pour the batter evenly over the apples in the dish.
Bake at 180°C for about 1 hour until golden and set through.
Once out of the oven, leave to rest and stabilise before slicing
