Cinnamon Apple Cottage Cheese Pancake Bites
Makes: 12 bites
Ingredients
½ cup cottage cheese (120g)
1 egg
1 small apple, peeled and finely chopped (about 100g)
¼ cup oat flour (30g) — or almond flour for low-carb
½ tsp baking powder
½ tsp ground cinnamon
1–2 tsp maple syrup or honey (optional)
Pinch of salt
Instructions
Preheat your air fryer to 160°C / 320°F, or oven to 175°C / 350°F. Lightly grease silicone moulds (air fryer) or a mini muffin tin (oven).
In a bowl, blend the cottage cheese, egg, and maple syrup or honey until smooth.
Stir in the oat flour, baking powder, cinnamon, and salt. Fold in the finely chopped apple until evenly distributed.
Spoon the batter into the moulds, filling each about ¾ full.
Air fry for 8–10 minutes until lightly golden and set. If using the oven, bake for 15–18 minutes.
Leave to cool slightly before popping out — they firm up as they cool.
