Healthy Homemade Twix Bars
Makes: ~12 bars
Almond Cookie Base
1 cup almond flour
1 tbsp cornstarch
¼ tsp sea salt
2 tbsp coconut oil
2 tbsp maple syrup
½ tsp vanilla extract
Creamy Caramel Layer
¼ cup peanut butter
¼ cup tahini
2 tbsp coconut oil
2 tbsp maple syrup
Chocolate Coating
1 cup dark chocolate, melted
Salt, to finish
Instructions
Preheat oven to 175°C / 350°F. Mix all the cookie base ingredients together until smooth. Press firmly and evenly into a lined baking pan.
Bake for 20 minutes until lightly golden. Let cool completely.
Mix the peanut butter, tahini, coconut oil, and maple syrup together until ultra-creamy and smooth.
Spread the caramel layer evenly over the cooled cookie base.
Freeze for 30 minutes until firm, then slice into classic Twix-style bars.
Dip each bar into melted dark chocolate, letting the excess drip off onto parchment paper. Finish with a pinch of fleur de sel.
Freeze for a final 15 minutes until the chocolate snaps perfectly.
Store in the freezer and eat straight from frozen.
