Carrot Retinol Salad
Ingredients
Carrots, peeled and ribboned or grated
Lime juice
Vinegar
Soy sauce
Sesame (oil and/or seeds)
Instructions
Peel the carrots and use a peeler or grater to create thin ribbons or shreds.
Tip lightly steam the carrots.
In a small bowl, mix together lime juice, vinegar, soy sauce, and sesame oil to make the dressing.
Toss the carrots in the dressing until well coated.
Top with sesame seeds and serve, or keep in the fridge.
