Cottage Cheese Flatbread
Makes: 1 large flatbread
Ingredients
225g cottage cheese (1% works great)
2 eggs
Seasonings of your choice (garlic powder, Italian herbs, paprika, salt & pepper all work well)
Topping ideas:
Tomato sauce + mozzarella + fresh basil (pizza style)
Hummus + roasted veg
Cream cheese + smoked salmon
Pesto + cherry tomatoes
Instructions
Preheat oven to 175°C / 350°F. Line a baking tray with parchment paper.
Blend or whisk together the cottage cheese and eggs until completely smooth.
Add your seasonings of choice and mix well.
Pour onto the lined baking tray and spread into a thin, even flatbread shape.
Bake for ~30 minutes until the top is deeply golden brown — don't pull it early or the inside will still be mushy.
Remove from the oven, add your toppings of choice, and return to the oven briefly if needed to melt cheese etc.
