Milk & Dates (Shir Khorma)

Ingredients
The Base: 360ml milk (dairy, oat, or almond).
The Sweetener: 100g dates (approx. 6–8 Medjool), pitted.
The Body: 50g walnut kernels.
The Kick: 5g fresh ginger (peeled) and ½ tsp cinnamon.
The Aroma: ½ tsp cardamom powder.
Garnish: Crushed pistachios or extra cinnamon.
Instructions
Prep: Remove all pits from the dates. If they are very firm, soak them in warm milk for 15 minutes first.
Blend: Combine milk, dates, walnuts, ginger, cinnamon, and cardamom in a high-speed blender.
The Barista Secret: Blend on high for 3 full minutes. This emulsifies the walnut oils to create a thick, latte-like foam.
Heat (Optional): Pour into a saucepan and simmer gently for 5 minutes for a warm, comforting version.
Serve: Pour into a glass or mug and top with crushed pistachios.
