Simple Egg Pancakes

Ingredients
2 large eggs, separated
1/2 tsp baking powder
1 tbsp maple syrup
Pinch of salt
Pinch of cinnamon
Instructions
Separate the egg whites and yolks into two bowls.
Add the baking powder to the egg whites and whisk until stiff, fluffy peaks form.
Mix the yolks with maple syrup, salt, and cinnamon until combined.
Gently fold the yolk mixture into the whipped whites, being careful not to deflate them.
Heat a non-stick pan on low heat and lightly grease it.
Spoon the batter into thick rounds on the pan. Cover with a lid and cook for 3–4 minutes until set on the bottom.
Carefully flip and cook for another 2–3 minutes.
