Rice Paper Almond Croissant
Makes: 3 croissants
Pastry Ingredients
6 rice paper sheets
2 eggs
Dash of maple syrup
1 tbsp coconut oil
Flaked almonds for topping
Filling Ingredients
1 egg
2 tbsp coconut sugar
1 tbsp cashew or almond butter
Generous dash of vanilla extract
½ cup almond flour
Instructions
Combine all the filling ingredients in a bowl and mix well. Set aside.
In a separate shallow bowl, whisk together the pastry ingredients (eggs, maple syrup, and coconut oil) — do not add the flaked almonds yet.
Dip one rice paper sheet into the pastry mixture until just softened.
Add a tablespoon of the filling onto the rice paper sheet.
Fold and assemble into a croissant shape as shown in the video, wrapping a second rice paper sheet around to seal.
Top with flaked almonds, pressing gently so they stick.
Air fry at 180°C for 10 minutes until golden and crispy.
Dust with powdered monk fruit sweetener and enjoy while warm!
